A simple tofu (bean curd) dish, prepared with just tofu puffs (bean curd puffs) and eggs and has a tasty braised oyster sauce.
1 packet bean curd/tofu puffs (about 15 ping-pong ball size or whatever shape and size available in your neighborhood stores)
2 eggs – beaten
3 cloves garlic – minced
1 stalk cilantro (coriander)
1 stalk scallion (spring onion)
Seasoning Ingredients A
2 tablespoon oyster sauce
½ teaspoon salt
½ teaspoon sugar
½ teaspoon soy sauce
Dash of white pepper
1 teaspoon of cornstarch
1 Tablespoon water
1. Cut bean curd/tofu puffs into halves, if ping-pong ball size (cut to size if any other shape) and put in beaten egg to absorb for 30 minutes or more.
2. Make a slurry with Ingredients B.
Step 1. Heat up pan and place tofu puffs to shallow fry. Dish up when golden brown.
Step 2. Put in 1 to 2 tablespoons of cooking oil – oil left after frying the tofu puffs, if any, may be used. Put in garlic to fry for a few seconds. Add in the puffs and stir-fry for a minute.
Step 3. Add water to just cover puffs. Mix in the oyster sauce and the other seasoning (Ingredients A). Stir till oyster sauce dissolved completely. Put on the lid and simmer on low heat till puffs soften, and sauce reduced to half.
Step 4. Add in cornstarch slurry (Ingredients B). Mix well.
Step 5. Dish up puffs together with the sauce on to a plate and garnish with chopped cilantro (coriander) and scallion (spring onion).

Footnote: This can be a vegetarian dish, as it does not have meat. For vegetarians who do not take garlic, it
may be omitted and the oyster sauce used will be the vegetarian kind.
