Basil is a kind of herb with small light green leaves related to the mint family. It therefore has a strong minty smell. There are several varieties of the herb, which feature in the cuisine of many countries such as Italy, France, China, India, South East Asian countries, the Mediterranean and South America.
The herb is believed to have uplifting and refreshing qualities. The variety, sweet basil (九層塔), is more popular among the Chinese who believe that it helps to dispel wind in the body and so is good for people with rheumatic and flatulence problems. Another way of using the herb by the Chinese is in the making of basil and egg soup, as taken hot, it is invigorating and especially good for a runny nose.
For those who love the smell of the herb, here is a fried rice recipe using sweet basil and egg as the main ingredients.
Ingredients
3 cups precooked white rice
¾ cup sweet basil leaves
2 eggs
2 Tbsp cooking oil
1 tsp of fried shallot oil and some fried shallots (optional)
Seasoning sauce
½ tsp salt
½ tsp sugar
1 tsp soy sauce
a dash of pepper
1 to 2 Tbsp water |
Preparation
1. First, cut the basil leaves to small pieces – very roughly – need not be too fine.
2. Break the eggs into a bowl and beat it up lightly.
3. Mix the seasoning sauce with the water (1 or 2 tablespoons depending on the softness of the cooked rice) till salt totally dissolved.
Method
1. Put in the cooking oil in wok or pan over medium heat. Swirl the oil around the pan so that food will not stick.
2. Pour in the eggs – scrambling it after a few seconds.
3. When eggs are half-cooked, put in the rice to stir-fry. Keep on turning and frying.
4. Add in the seasoning sauce and mix well by continuous turning and frying for a minute or two.
5. We now add in the basil leaves, mixing well but not to overcook the herb.
6. For additional flavor, a teaspoon of fried shallot oil may be mixed in.
7. Fried shallots can also be sprinkled on the fried rice before serving.
